The best way to get rid of any infections that might end up in fish meat is by cooking it. However, it is permissible to eat it in another form. You should know how to salt fish to kill opisthorchiasis and what safe cooking methods exist.

The most dangerous for consumption is stroganina - raw fish meat, cut into thin slices. In this case, it is not processed, so there is a possibility of contracting opisthorchiasis and any other parasitic or bacterial infection.

Salting is a fairly reliable way to destroy parasites, if everything is done correctly. The main thing is to add a lot of salt. The fish should be covered with salt in layers, without adding water - it will cook in its own juice. Before salting, it should be well processed, washed, and the insides removed.

How much to salt river fish? The minimum that fish meat should be kept is five days. After that, it becomes safe to consume. If a piece weighs more than one kilogram, it should be consumed only after 8-10 days. The smaller the amount of meat, the earlier it becomes edible. Among the inhabitants of open fresh water bodies, opisthorchiasis is ill with representatives who feed on infected molluscs, crustaceans or small fish.

Most often, ide, perch, carp, dace, ram are infected with opisthorchiasis, much less often the named fish parasites infect sterlet.

The list of fish carriers of opisthorchiasis also includes the following:

  • bream, carp, roach, carp, crucian carp (representatives of the carp family);
  • perch, ruff, catfish, wrasse (perch);
  • thorn, sturgeon (sturgeon);
  • karelian trout, musk, nelma, white fish, grayling, peled or cheese (salmon).
  • Many representatives of the salmon family are considered gourmet varieties, which are present in most dishes raw, and although salmonids rarely get helminthiasis, there is still a risk of infection.
  • Trout belongs to salmon, therefore it is practically not susceptible to helminthiases, but Karelian trout, which is grown in artificial reservoirs, is easily infected with cat fluke.
  • Previously, it was believed that sterlet and sturgeon do not get sick with helminthiasis, but recent data indicate that some of them also contain parasite larvae due to pollution of water bodies with waste (feces, sewage, garbage).

Almost all representatives of the cyprinid family are susceptible to opisthorchiasis infection. Among them: roach, sabrefish, silver carp, bream, asp, rudd and others. Yazi and perch are especially often infected, but sturgeon specimens are considered relatively safe.

Marine life is devoid of this parasite, with the exception of some species that can move from salt water to fresh environment (muksun). The northern peoples are very fond of eating this fish in its natural form, so they have a high risk of opisthorchiasis.

Predators are less susceptible to disease, but there are cases when flukes are found in pikes if they eat infected young carp breeds. Moreover, opisthorchiasis is found not only in fish, but also in caviar, which must be taken into account when processing the prepared raw materials.

The ambassador is carried out in a strong saline solution, which is prepared at the rate of 1 kg of salt for every 5 kg of fish that needs to be stacked in layers, do not pour water. Before salting, the fish is carefully examined, washed, and the insides removed.

How much to salt the fish to kill opisthorchiasis depends on its size, for example:

  • small fish - 2 weeks;
  • if the length is 20-25 cm - 3 weeks;
  • large specimens over 25-30 cm - at least 5 weeks.

With a small amount of fish, the cooking time is reduced in proportion to the weight and volume of the raw material; the minimum for salting is 10-14 days.

Opisthorchiasis dies only when hot smoked for 2 hours at a temperature of at least 80 degrees. On the contrary, cold smoking does not kill parasites, the larvae can maintain their viability, so this method is not suitable for river fish or requires preliminary freezing or salting.

This method is safe in terms of infection with opisthorchiasis, if the temperature and freezing times are observed per 1 kg of raw material:

  • at -10 degrees Celsius, fish should be kept in the freezer for a month;
  • at -15 degrees, 2 weeks are enough;
  • at -28 degrees it takes two days;
  • at - 35 only 15 hours;
  • at - 40 degrees, 8 hours are enough.

The consumption of freshly frozen fish (sliced ​​fish) is considered dangerous, the product prepared in this way does not guarantee the destruction of the larvae.

Cooking over a fire or in the oven

The difficult question is how to kill opisthorchiasis, for example, in a large asp. Purchased or caught large fish must be pre-processed by cutting into small pieces of 100-120 g. It is necessary to cook or stew with water under a lid for at least a third of an hour from the moment of boiling, the pieces must be fried in a pan, turning them over from all sides.

At the same time, the kitchen must have separate cutting boards for fish, meat and finished products. You can use again only a board treated with detergent solutions and washed with boiling water. How to cook fish in the oven? Pies must be baked for at least 60 minutes at a temperature of 180-200 degrees.
